Swedish Pancakes

After I posted my menu for this week Michelle asked what a Swedish pancake is. A swedish pancake is a very thin pancake, a lot like a crepe. My mom used to make these when I was younger frequently - they were and still are one of my favorite foods! Here is my mom's recipe:

Swedish Pancakes
3 eggs
1 1/4 cup milk
3/4 cup flour
1/2 tsp salt
1 Tbsp sugar
2 Tbsp melted butter

Beat eggs, stir in milk. Add flour, sugar, and salt. Add the butter last. Mix till smooth (you'll get them smooth quicker if you use a mixer or blender). Heat a skillet or griddle on medium-high heat. Add batter to hot greased skillet. (About 3 Tbsp = a 9" pancake.) Serve with syrup, jelly, or fruit.
